Chicken Tonight

..........and Mashed Potatoes!!!

Mrs. Jones whipped up some Buttermilk Fried Chicken Fingers. Fried these babies up and.....

Voila!!! Doesn't this look awesome!!!
And you cannot have fried chicken without mashed potatoes.
Marinate the following in the refrigerator for 2 hours:
  • 2 Pounds of chicken tenders
  • 2 cup buttermilk
  • 1 large onion, sliced
  • 1/4 cup chopped mixed fresh herbs (parsley, tarragon, thyme) or a teaspoon each of the dried herbs.
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
Mix the following dry ingredients before frying the chicken:
  • 2 cups flour
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon onion salt (didn't know there was a such thing)
  • 1 teaspoon cayenne pepper
  • Salt and Pepper
  • 2 cups grapeseed oil, or other high smoke-point oil such as canola oil, or peanut oil
That's It!!!
